Slow Food Columbus
Dave's Webercam post "On Mindfulness and Diet: It's About Balance" inspired us to talk about eating well in moderation.

There seems to be more vocal proponents of sane eating vs. dieting fads. Loosing weight is easy, but remember that diets end. Once the diet runs it's course we are back to square one and our lifestyle will bring our bodies back to the previous weight. Permanent weight loss requires a lifestyle change. Dave outlines his family's lifestyle changes in his post and it's shockingly close to the one Mary and Zach went through.

Also, Dave tips us off on a Nutella ice cream recipe

Zach and Jim - with Mary, take a stab at impromptu on site reporting. (Don't try this at home....or in the field.)  We got a brand new mic after this field experiment so stay tuned for future (with much increased sound quality) escapades from the field.

Segment The First

Dutch Rub, walks us through his Shiitake Sliders.

Segment The Second (Chicken Finger Throwdown)
Jeff Johnson from Urban in Fill, Mary, Jim, and Zach do a head to head comparison of Raising Cain's and Zaxby's. (Pro bono tip: Avoid the Zaxby's Texas Toast.)

Oh, and Mary is knitting Zach the most badass scarf in the history of mankind.

Jim and Zach talk to Dave of Webercam

For beginners, Dave recommends Smoky Joe Weber Grill (14.5 inch) Dave, however,  uses the 22 inch model.

The Kettle Grill has been around since the 1800's.

Here is a shot of Dave's indirect heat setup.

We're not charcoal snobs. Propane has its place for some of the quicker grill jobs like fish, burgers, and steak.

Flank Steak makes for one of the best cheap (frugal) cuts of meat.

Here is an example of one of Dave's grill modifications.

A good starter project is a whole chicken, brined, and grilled over indirect heat for three-ish hours.

Grill vegetarian! Eggplant and zucchini both do very well.

Become a Certified BBQ Judge.

Here is where Dave goes to research BBQ:

1.  Weber Cam

1.1 Dave speaks for hours with Andrew, the author of Slim Pickings Pork - he is a dedicated low 'n slow guy who uses an electric smoker and prepares some of the most superb food ever.

2.  Lump Charcoal Reviews: The definitive source for the best lump charcoal.

3.  Barbecue USteve Raichlen is one of the most popular grilling/BBQ guys around.  We believe Steve stole Dave's idea with his grill cam.  Let's keep the lawyers out of that conversation.   Steve's books are all very good for newbies and pros.

4.  The Virtual Weber Bulletin Board
This is a forum for BBQ/grillers that use Weber Stephens equipment. You have to join to post, but can browse the threads without registration.

5. Meat Henge (Dave's favorite meat blog)
Meat Henge: Dr. Biggles is the man of smoking, grilling and BBQ.

Join us for a change in latitude then virtually visit some Central Ohio markets.

Prior to his trip Down Under Jim checked with Kent Rand at Hills Market for a tip on cheese tourism. Kent passionately suggested Whitestone Windsor Handmade Blue from NZ. Jim finally found this rare cheese at The Epicurian in Queen Victoria Market in Melbourne.

Wine regions in Australia:
Start with the World Atlas of Wine – 6th edition – available from the Columbus Metro Library.

Hunter Valley

Note:  2008 is a bad year for Hunter Valley vintages.

The country has been in drought over 5 years but Hunter Valley had too much rain this year so many grapes are rotting on the vine.

Jim also hit the Rutherglen Region (Tokays, Muscats, and Durif's) and the Yarra Valley (Home of Yering Station Fortified Shiraz - the greatest red wine ever).  We hear about these wine spots too.

Be sure to support our local independent markets! Hills, Weiland's and North Market deserve our business.

Next time you're in Cincinnati, check out Jungle Jim's. It is a HUGE market.

.....and more in this special dual hemisphere podcast.
