He wanted to do a short phone bit w/ bit talking about some wines from
Ohio that I like. Sure. Then I realized that me talking was not only
dull but by the time that he edited out my inevitable cursing, all that
would be left was, 'Yo. Kinkead Ridge Revelation and Ferrante Golden
Bunches. Drink.' So I figured I would have Zach try these wines with me
and that morphed into gathering a larger group tasting blind several
wines from Ohio versus the rest of the World.<br/><br/>I pulled a bunch
of Ohio wines from my cellar and went shopping for 'comparable' wines
to face-off. What 'comparable' means provided an interesting discussion
during the event. If we take the best of Ohio and match it with the
best of the World ... Ohio gets creamed. No ands ifs or buts. Ferrante
and N. Ohio is no Donnhoff and Nahe, just for example. What I mean by
comparable are wines similar both in price range and aspiration. I
matched the Ohio wines with other wines of a price point and that a
consumer would likely be selecting by style and appeal. I wasn't very
systematic about as I also looked at this as an experimental version of
a more ambitious project.<br/><br/>I created seven flights where an Ohio
wine was matched with one or two other wines and tasted blind with my
seven panelists. The whites were slightly chilled, popped and poured. I
opened the reds for just a few minutes before pouring - the idea being
to replicate restaurant or home consumption. Cheeses and cracker were
available and I encouraged the panelists to discuss each flight before
each simply ranked the wines. Having participated in and ran wine

<description><![CDATA[Jim interviews Jim Corrova of <a href="http://www.tatitalian.com">TAT Ristorante</a>. TAT originated both the Poor Boy sandwich and Pizza in Columbus. <br/><br/><div style="margin-left: 40px;">Pizza can be placed in Columbus in 1929 at TAT Ristorante. TAT served pizza in Flytown, a not so nice name for the part of town for immigrants and African Americans that was between Spruce Street and Buttles Avenue, west of Goodale Park. Flytown was razed in the 1950âs. <br/><br/>Pizza was not on the menu at first, but you could order it at TAT Ristorante di Familia. The restaurant has some menus from the 1930âs which do show pizza as a menu item. TAT was named after the new Transcontinental Air Transport company with used Ford Tri Motor planes and passenger trains to transport people from New York to Los Angeles in 48 hours. The first stop on this journey was in Columbus where travelers left a train and traveled to the new Port Columbus airport to begin the air segment of their trip. TAT was new and exciting. Not being a native Columbus resident I had never heard of the event, so a bit of research was needed.<br/><br/><div style="margin-left: 40px;"><span style="font-style: italic;">Taste the Future is an event featuring culinary masterpieces from over 50 of central Ohioâs best establishments. The real stars of this event are the amazing chefs from around the community who show off their remarkable culinary skills to over 1,000 guests.</span><br style="font-style: italic;"/><br style="font-style: italic;"/><span style="font-style: italic;">Taste the Future takes place on the downtown campus of Columbus State Community College and all proceeds from the event fund scholarships and special projects. Every year the event helps hundreds of students build their future with a college education.</span><br style="font-style: italic;"/><br style="font-style: italic;"/><span style="font-style: italic;">Tuesday, September 16, 2008</span><br style="font-style: italic;"/><br style="font-style: italic;"/><span style="font-style: italic;">5:30 - 9:00PM</span><br style="font-style: italic;"/><br style="font-style: italic;"/><span style="font-style: italic;">Downtown Campus, Columbus State Community College</span><br/></div><br/>Through the course of the interviews, we discovered that this event is heavily tied to the <a href="http://www.cscc.edu/hospitality">CSCC</a> Hospitality Program. For example, the Hyatt's spread is chosen and prepared by the apprentices with guidance from David Wolf; master and CSCC alum. This allows the guests to have first hand interaction with the result of the scholarship programs that they are helping to fund. <br/><br/>The 20 year history of the gala allows us to see some of the people who have come out of the CSCC Hospitality Program and where their careers have gone. We were fortunate enough to talk to 3 such gentlemen: Matt and Charles Langstaff of <a href="http://www.bexleysmonk.com/">Bexley Monk</a> and Dave Wolf of <a href="http://capitolsquare.hyatt.com/hyatt/hotels/entertainment/restaurants/index.jsp">Hyatt on Capitol Square Plaza Restaurant</a>. <br/><br/>(Note that during the course of the interview that I have a slip of the tongue and say 10 years of Taste of the Future when it should be 20.)<br/><br/>Also, we get sidetracked discussing wood ovens again! <br/><br/>Carol Kaiser took the time to give us a brief history lesson. <description><![CDATA[Slow Food Columbus is promoting a <a href="http://slowfoodcolumbus.wordpress.com/2008/07/04/benefit-for-alanas-server/">Benefit for Alana's Server</a>. <br/><blockquote><p>&quot;On Sunday, July 13, there is a Mexican buffet at Alanaâs
from 4-8pm. Admission is $50 and those interested in margaritas, etc
can purchase those separately. Proceeds will go to an account for James
Westfall, one of the servers at the restaurant. A week ago, James went
into sudden cardiac arrest at his home and has been in ICU at Riverside
ever since. He was diagnosed with long q-t wave syndrome, a congenital
problem with the electrical system of the heart. James is only 26 and
has no health insurance. So I am letting everyone know who might be up
for some great food and great company. Please spread the word and bring
along any others who feel the same!<br/>

Mockingbird Meadows Tasting and Tour will occur on July 13th. In August there will be a pig roast. There will be a wine dinner later this year, and in September there will be a dinner at Flying J. This episode we cover gatherings that revolve around pizza, hot dogs, chili, and beer tastings. <br/><br/><div style="margin-left: 40px;">Ashley's General Food Pairing Notes:<br/>* When in doubt: pair region with region. Food using ingredients and spices from particular regions of the world typically pair best with the wines of those regions.<br/>* Strong flavored food needs strong flavored beers and wines. Both must be able to hold their own, without being overshadowed by the other.<br/>* Lighter food goes best with lighter beverages: you never want the beverage to completely overwhelm the taste of the food. And visa versa.<br/></div><br/>Pizza Parties<br/><a href="http://cmhgourmand.wordpress.com/slice-of-cmh/">The Gourmand's guide to pizza in Columbus</a><br/><br/><br/><div style="margin-left: 40px;">Ashley's <span style="font-weight: bold;">Pizza</span> Pairing notes:<br/>* Wine and beer pairings differ with the cheese, sauce and topping used.<br/>* Chianti is a classic pizza wine. Any red wine from Italy also pairs well. When in doubt: if you are in a mom &amp; pops Italian place - go for a carafe of the house wine. It will go with everything.<br/>* The <span style="font-weight: bold;">3 P's</span>: Pale Ale, Peroni, and Porter. Typically, really strong flavors and pungent ingredients pair better with stronger flavored beers such as pale ales and IPAs. More middler flavors and classic topping pairs nicely with lighter beers such as an Italian Peroni Lager. Pizzas with sweeter ingredients such as balsamic onions, sundried tomatoes, and goat cheese may pair nicely with a porter.<br/></div><br/>Hotdog Parties<br/><br/><a href="http://en.wikipedia.org/wiki/Chicago-style_hot_dog">Chicago Dogs Defined</a><br/><a href="http://irvings.com/">Irvings Hot Dogs - Chicago</a><br/><a href="http://en.wikipedia.org/wiki/Coney_Island_hot_dog">Coney Dog</a><br/><br/><br/><div style="margin-left: 40px;">Ashley's Hot Dog Pairing Notes:<br/>* It is hard to decide what pairs well with processed meats. I would suggest pairing beverages with toppings. Most hot dog toppings tend to be German in nature (sauerkraut, mustard etc.). This is why I think German beers would compliment hot dogs well. Suggestions: <a href="http://www.spatenusa.com/3_products/3_1_prod_spectrum/index.htm">lagers</a>, pilsners, dunkel or a doppelbock is you want something heavier.<br/></div><br/>Chili Parties<br/><br/><div style="margin-left: 40px;">Ashley's Chili Pairing Notes:<br/>* Once again, this all depends on the ingredients and spices used. Chili uses predominately South American spices, so South American wines will pair well. Good countries to look for are Argentina and Chile. Both produce excellent Malbecs, Cabarnets, Chardonnays, Viogniers, and Sauvignon Blancs (sometimes called Chenin Blanc). I find spicy food pairs well with bold, oaky and dry wines.<br/>* Chili needs a strong beer that can cut through the heat. Strong, hoppy beers are excellent at doing this. I would suggest going big with an IPA or Doule IPA, but pale ales also work well. Since chili is a South American dish, Mexican beers with a hint of lime will also pair nicely.<br/><br/><br/></div><br/>Music from:<br/>R.C.
